    The grapes for the Cuvée Nicholas are macerated overnight but, unlike the Princesse de Cléves, it is then fermented in oak to create a more complex wine with a longer palate. This fabulous wine is bursting with citrus, grapefruit and melon fruits. The palate then follows displaying complex herbal flavours brushed with vanilla. Grilled fish would be a cracking partner for this wine, which should be drunk over the next couple of years.
