This unique blend of Chardonnay and Roussanne depends on the north wind to ensure gentle aeration of the berries and thus humidity-free maturation. The berries were carefully picked at night so as not to be exposed to the heat of the day. A pale yellow colour leads to an intense and elegant nose. Notes of honeysuckle, peach, melon and caramel are backed-up on the palate and contribute to a well-balanced persuasive finish. Open over the next year or two with seafood and chicken dishes or as an interesting partner to Asian fusion cuisine.
