Gamay is always hand harvested, as fermentation of uncrushed grapes begins within the grapes in the absence of oxygen. Domaine des Nuges, founded in 1976, conducts this fermentation in open top vats, resulting in semi carbonic maceration as oxygen slowly gets introduced. Very bright and vibrantly coloured. Aromas of red berries, red fruit and spice leap from the glass. The intense colour is not matched by the tannins, which are light and soft, with an almost sweet finish. At its best when drunk young, enjoy this over the next 18 months, with mushrooms or cold meats over lunch, tuna or even steak tartare.
