Season is usually between June October. Girolles are very fine mushrooms with a very subtle taste. They are commonly used in French receipes, like stews, risottos or omelettes. These are generally small, sweet and nutty golden treats that go particularly well with fish, chicken and beef and also in salads. Truly versatile.
